Confession...I don't like pancakes

(sorry dad)

I have very fond memories of being woken saturday mornings to my dad's music blasting downstairs (Lionel Richie, and the soundtrack to Phantom of the Opera (the musical) stand out the most in my memory) and the smell of Krusteaz pancakes wafting up the stairs.

Since I've been married, my Mister uses Krusteaz to make pancakes, but more often waffles, since I like them better. The sad thing is that waffles made with Krusteaz, taste like pancakes.

I'll eat them, but why? Does anyone really like pancakes?

I started making homemade waffles a couple of years ago, and discovered that I can even eat them with a small amount of syrup without feeling sick after.

Here's the recipe so all of you closet pancake dis-likers can discover the joy of breakfast again.

2 eggs
2 C flour (I use whole wheat, or today, since I was out of whole wheat I used white, but only 1 3/4 cups, then 1/8 cup of ground flax seed and 1/8 c of wheat bran)
1 3/4 C milk
1/2 C oil
1 TBSP brown sugar
4 tsp baking powder
1/4 tsp salt

Beat the eggs until fluffy (you're supposed to use a hand mixer, but I just wisk them really fast), mix in all the other ingredients, then cook according to your waffle iron's instructions.

I cook them until they're crispy. If you really want a treat, serve them with strawberries and whipped cream (although that's dessert not breakfast, but life is short, right?).

I LOVE PANCAKES. No, I really do. Plain pancakes, healthy pancakes, blueberry pancakes, banana pancakes, green pancakes, pancakes and spam... well maybe that's pushing it... Some things do make me sick, but floating some Krusteaz on top of a pool a Mrs. Butterworths, while "Dancing on the Ceiling" plays in the background is quite salubrious to my cantankerous stomach.

Waffles are good too.

I've got a few variations that you might like. Because, when they're not just the store-bought mixes, I do likes my pancakes.

I like pancakes and I like your mother's waffles too, maybe even better if I can get her to not overcook them. There is some virtue (for her), in crusty waffles, too done meat and hardly cooked vegetables. I like near raw meat, but warmed through, vegetables cooked to death, (like school lunch), and waffles that have not turned any shade of brown yet.

I am unable to make waffles and there were too many of you to wait for the waffle iron to produce any number in volume, so Krusteaz became the iconic Saturday AM breakfast around here. The music and company was good though.

A couple eggs goes well with the pancakes and helps the digestion. At scout camp this week we had sausage, bacon, eggs, french toast, and Krusteaz, along with milk and OJ. It all tasted pretty good at 8200 feet.

Growing up, my mom would sometimes make a fresh strawberry syrup (picking the strawberries that morning) that would make any pancake delicious - even Krusteaz.

Dad- when I was a kid, the only thing I didn't like about pancakes was feeling sick because I had too much syrup on them.

It's only been the last couple of years that I've realized I don't really like them.

I do like dollar sized better, with a little applesauce on them they're quite edible. :)

The music and company was the best!

David- how sugary was the fresh strawberry syrup? Some things are meant to be sugary, and some things just make me sick. (Don't ask me how my body can tell the difference)

I have the same reaction to pancakes, Allie. A friend of mine used to make these great, hearty spelt pancakes that didn't make me feel icky. Bill and Nada's bright yellow pancakes...I don't remember if they made me sick, but I'd give up a pair of tango shoes to eat there a few more times.
